white chocolate macadamia chip cookies

I did the strangest thing the other day... I bought pudding mix, and I put it.... in my cookie dough. AND it was the best decision I've ever made! So here I give you: white chocolate macadamia chip cookies, with a super secret addition of white chocolate pudding mix in the dough. This makes the most deliciously addicting cookie dough ever, but it also makes the fluffiest, chewiest, crisp at the edges and puffy cookies ever. So perfect! This recipe is easy as always, but I feel like the addition of pudding makes these nearly fool-proof. They should come out perfect every time. :)

Do you not like white chocolate? Well, that is totally okay. Why? Because you can so easily swap out the white chocolate pudding for a different flavor! Like... vanilla, or cheesecake, or maybe even chocolate! That sounds yummy. :) These easy, scrumptious cookies feature white chocolate chunks, macadamia pieces, and mini chocolate chips. I took the classic white-chocolate-macadamia cookie and added some semisweet, because at this point, I think we all know my family  is very particular about their chocolate. These were gone in a day and a half, if you can even believe it. Make these! And take them to a Memorial Day party tomorrow. You will be soooo popular.... :)

marshmallow nutella calzone

So, my littlest brother turned ten yesterday... this is very sad! But, something very very good came out of this monumental double-digits moment. We went out to dinner to this really yummy pizza place in Dallas, and we had a dessert that was... insane. This dessert, specifically. A calzone filled with marshmallows, and coated with a lovely layer of Nutella. Oh. Em. Geee.

mississippi mud bars

Hello, my name is Valentina, and my mission  is to make you fat. Ha! Okay, okay, that's a lie... my mission though, is to show you recipes and pictures that are so delicious, you won't be able to resist them. Oh yes. It's all part of my secret plan to look skinny by making everyone else around me fat. But I do it out of love. Anyways, you may be wondering what this delectable picture right here is! Well, let me enlighten you. Imagine... a super thick, rich brownie-cake, with pecan chunks and toasted coconut floating within. Then, top that with a layer of marshmallow and toast the heck out of them so they are golden and delicious and melty. And then, to top THAT, cover the whole thing with a ridiculous chocolate glaze, which is itself topped with more toasted coconut and more pecans. Um, yes please!

waffle cookies {plain and chocolate}

Happy Mother's Day! I hope everyone has been having a good day with their mommy today :) Don't get me wrong, we should show our moms love and appreciation every single day, but Mother's Day is just for spoiling and pampering the best lady in your life! I'm sure everyone has eaten breakfast, etc. by now, but these ridiculously easy waffle cookies would be perfect for a snack! The batter comes together in the blink of an eye, and they cook in literally TWO minutes. Mmmm. Instant gratification.

I am calling these waffle COOKIES because the batter is not the same as for regular ol' waffles... and to be honest, these taste a lot like really good quality waffle cones! So you know what would probably be the best idea in the world? Ice cream sandwiches made with these. YES. Do it! Your mom will be so impressed with how clever you are.

flourless chocolate crackle cookies

Happy Friday! I hope you guys all had a great week, and a good Friday to top it off. I had a crazy, crazy week with four tests... glad that's over! Next week I have finals, and then I am finally OFF for summer! I am beyond excited to give my poor brain a break and have some time to go back to baking. What did you guys do on this glorious May friday? I personally got home from work, cranked out three miles, then got on Pinterest and found something to bake. What? Is that weird? I hope not. What probably IS weird is the fact that I embarassingly often end up baking in my sports bra and workout shorts. This is not a "secret diet strategy" (i.e. if your belly is out, you will not want to eat any of that cookie dough). I wish it was though. I wish that worked. Sadly (or not sadly?), it totalllyyy does not work. I ate so much of this delicious cookie dough that my stomach hurt. No regrets though, it was so yummy. :)

If you've ever made flourless chocolate cake, you know that this kind of cake is super light, airy, and fluffy, almost like a souffle! And if you haven't.. go make my flourless chocolate cake roll. LIFE-CHANGING. Anyways, flourless chocolate cookies are the complete opposite! Dense, thick, fudgy, and super rich. Total chocolate bombs. But so delicious! I am thoroughly ashamed to admit I have not tried one of these cookies yet because as stated shortly ago, I ate a bunch of dough and I wasn't able to even look at a cookie. Ugh.
