waffle cookies {plain and chocolate}

Happy Mother's Day! I hope everyone has been having a good day with their mommy today :) Don't get me wrong, we should show our moms love and appreciation every single day, but Mother's Day is just for spoiling and pampering the best lady in your life! I'm sure everyone has eaten breakfast, etc. by now, but these ridiculously easy waffle cookies would be perfect for a snack! The batter comes together in the blink of an eye, and they cook in literally TWO minutes. Mmmm. Instant gratification. 



I am calling these waffle COOKIES because the batter is not the same as for regular ol' waffles... and to be honest, these taste a lot like really good quality waffle cones! So you know what would probably be the best idea in the world? Ice cream sandwiches made with these. YES. Do it! Your mom will be so impressed with how clever you are. 




The white ones have just a bit of maple syrup in them, giving them a neutral flavor that would be perfect with any ice cream flavor you can imagine. I do remember seeing a recipe for brown butter ice cream somewhere... just saying. That would be amazing. The chocolate ones are delicious too, though! They are pretty chocolatey, with a cocoa batter and mini chocolate chips, so I would personally go with a vanilla ice cream inside. :) But it doesn't matter whether you stuff these with ice cream or not, they are soooo good! And perfect for when you are hungry RIGHT NOW. Trust me. :)



Waffle Cookies
Adapted from Crazy About Cookies
Yields: about 12 of each flavor when made in a Belgian waffle iron

for the plain waffle dough
1 egg
2/3 cup all-purpose flour
1/2 tsp baking powder
1/8 tsp salt
1/4 cup (1/2 stick) unsalted butter, softened (plus more for greasing)
1/4 cup white sugar
1 tbsp maple syrup

Preheat a waffle iron, and brush it with butter. In a medium bowl, combine the butter and sugar, and beat until light and fluffy. (This is a very small amount of butter, so just do it by hand. It is not even worth getting your mixer dirty.) Add the egg and maple syrup, and beat until blended. Add in the flour, baking powder, and salt, and stir until the ingredients just come together. If using a normal waffle griddle, drop dough by 1 1/2 rounded teaspoons, while if you're using a Belgian waffle griddle (i.e. deeper grooves) drop dough by 1 1/2 rounded tablespoons. Drop appropriate amount of batter on the iron 2 inches apart (one per section), and cook for 2 minutes or so, until firm and golden brown. Lift cookies out with a fork, and set on a plate to cool.

for the chocolate waffle dough
1 egg
2/3 cup all-purpose flour
2 tbsp cocoa powder
1/2 tsp baking powder
1/8 tsp salt
1/4 cup (1/2 stick) unsalted butter, softened (plus more for greasing)
1/4 cup white sugar
1 tsp vanilla extract
1 tbsp milk
1 tbsp maple syrup
1/2 cup mini chocolate chips

Follow the same procedure as for making the plain waffle cookies, but add the cocoa, vanilla, and milk at the same time as the egg and syrup. Watch these carefully when cooking, because you will not be able to detect a color difference so they can burn more easily!
